Im immediately transported to Corbos Bakery in Little Italy, where Ive been known to polish off those sweet creme-filled, crispy-shelled pastries two at a time.

Hey, if youve ever had one, can you blame me? Theres even a famous scene from The Godfather where, after whacking Paulie in the car, Don Corleones loyal lieutenant says, "Leave the gun. Take the cannoli."

My sentiments exactly.

So when I spotted this sexy raw vegan rendition from VeganLisa, aka the Vegan Cookbook Critic, my inner voyeur broke out in a cold sweat. Delicious decadence sans flour, sugar or oil. Bellissimo!

Leftovers for Breakfast Casserole Slow Cooker Recipe


Im a hermit. Is it okay to be a hermit? I like to go for walks, and I certainly get enough Vitamin D by pulling weeds in the yard and hanging out at soccer practice, but if I had a choice Id prefer to hang out at home in my jammies.

Its too bad WebVan went under. Itd be great to have milk, bananas, and orange juice delivered (why is it were ALWAYS out of those things?).

And dont forget to bring fresh coffee.

There you go: thats a business venture to get behind! Breakfast delivery for lazy busy moms.

The Ingredients.

serves 8

1 (30-ounce) package frozen hash brown potatoes
2 cups diced already-cooked meat (whatever leftovers you have in the house. Great way to use up shredded chicken, pot roast, corned beef, ham, turkey, or any combo you might have)
2 cups diced already-cooked veggies (asparagus, broccoli, roasted veggies, whatever)
8 eggs
1 cup milk (cow, soy, rice, goat)
2 cups shredded cheese (your choice, we usually have a combo of mozzarella and cheddar)
salt and pepper to taste at the table

The Directions.

Use a 6 quart slow cooker and spray the insert with cooking spray. Dump the still-frozen hashbrowns into the pot. In a mixing bowl, whip together the eggs and milk and stir in your cut up veggies, meat, and cheese.
Dont season right now, because your meat and veggies will have whatever flavor they had when they were first cooked (and ham and corned beef tend to have a lot of salt taste already), but instead season at the table. Pour this mixture on top of the hashbrowns.

Cover and cook on low for 6-7 hours (its exactly 7 in my elume) or on high for about 3-4. If youve never cooked breakfast overnight in your cooker, opt for the low end of the cooking time. You can always let it cook on high if its not quite done in the morning, or let it happily sit on warm until youre wide awake and ready for breakfast.

Michelle says she cant cook food overnight, though, because the smell keeps her awake! I dont have a suggestion for that... sorry. :-)

The Verdict.

This is a GREAT way to use up extra food from having company over or food left from holiday dinners. I know some of you are uncomfortable not having an exact recipe to follow, and I get it. I really do.
I promise though, that there is little room for error when crockpotting. If you like the ingredients going in, theyll taste good mixed in a casserole. If you cant stand asparagus, please dont use it! Use what tastes good TO YOU.

Anti inflammatory Gluten Free Diet for Celiac

Low Grain Is Good for Everyone

I don’t think that I have an intolerance for grain, i.e. a gluten sensitivity, but it is so common and the biochemistry is so obvious, that it is only prudent to avoid wheat and related grain products. A low or gluten-free diet is also similar to the other common healthy diets, e.g. low carb and anti-inflammatory.

Gluten-free diets came to my attention recently in two ways. First, I saw Food, Inc., a documentary movie about abuses by multinational food processors. After that movie, I felt like I was a goose being readied for foie gras. Second, was a newspaper article on the expense of a gluten-free diet and the challenges of avoiding gluten.

I haven’t had to worry about wheat contaminating my diet, but I am sympathetic to the celiacs that I know who have to labor with a sloppy and exploitative food industry that uses the cheapest ingredients to compose the processed foods that are consumed in modern diets -- processed foods are complex blends of many different potential allergens from innumerable sources throughout the world.

A Celiac Diet Is Good for All
Fortunately, the answer to pervasive gluten is just a modest modification of the basic anti-inflammatory diet that I recommend on this blog. Unfortunately, people who have already developed gluten intolerance, have probably had the problem for years before diagnosis and that means that their intestines have already suffered major physiological alterations and they have problems absorbing nutrients and vitamins. Celiacs also, because of their chronic inflammation and autoimmunity, tend to readily develop food allergies and other autoimmune diseases. The recommended anti-inflammatory diet will help to avoid celiac, put celiacs into remission and avoid development of subsequent allergies and autoimmune diseases.

Vitamin D Is Usually Deficient (and a source of inflammation)
The basic anti-inflammatory diet starts with a return to optimal vitamin D with the use of an initial blood test, followed by high level supplements to reach a suitable level and then maintenance with D3 supplements of usually 2,000-5,000 IU per day. Depending on the D3 supplement, vitamin A will also need to be supplemented, because it interacts with vitamin D. Remember that sunshine is only effective in producing adequate vitamin D if you do not suffer from chronic inflammation. I would assume that all celiacs tend to be vitamin D deficient.

A Low Carb Diet Is Easier for Celiacs
The next component of the basic diet is low carbohydrates, that means a minimum of high glycemic foods, which means to avoid sugar and starch, do not cook vegetables more than necessary and don’t over-chew your veggies. This is good for celiacs, because it reduces the need for common grain foods that no one should eat: bread, cereal, pasta, etc. Everyone should lower their consumption of these wheat products in solidarity for celiacs and for general good health. Cereal is a very bad idea for children!

Most Vegetable Oils Are Unhealthy
Most vegetable oils contribute substantially to world-wide inflammation and celiacs don’t need the added burden of inflammatory omega-6 vegetable oils. Only olive oil and butter should be used. Saturated fats are safer than typical polyunsaturated vegetable oils.

Eat Wild Fish or Tons of Fresh Flax
Most people eat too little omega-3 long chain fatty acids, since these are most abundant in fatty fish, such as wild salmon (farmed fish are fed corn and have reduced omega-3 and increased omega-6 fats.) Few vegetable sources are available, since the omega-3 fatty acids are unstable and present in leaves rather than seeds. Flax seeds have short chain omega-3 fatty acids and must be freshly ground and consumed by the cupful, because the conversion to the long chains, in which they are useful, is very inefficient. Most celiacs will need to use fish oil (or krill oil, if fish is not tolerated) supplements (4-8 EPA/DHA capsule per day taken in a meal rich in fats for bile uptake) to balance the ubiquitous inflammatory omega-6 in their diets.

Grassfed Meat/Eggs Are Your Friends
Celiacs should seek out grass/pasture fed meats, eggs and wild caught fish. Corn-fed animals have higher levels of omega-6 fats and these contribute to dietary inflammation. Celiacs can usually eat meat and fish and these are very healthy foods. Red meat was not shown to contribute to degenerative diseases, it was the high carbs eaten with the meat that produced the inflammation that contributed to heart disease. (Remember that statins only decrease cardiovascular disease because they inadvertently lower inflammation, not because they lower serum lipids, LDL.)

No, No’s: HFCS and trans fats
High fructose corn syrup and trans fats are inflammatory and unhealthy for anyone, and should be avoided as much as wheat gluten. Fruits should be eaten as seasoning, since their fructose is not healthy and they also contain ample sucrose.

Most People Would Be Healthier on a Celiac Diet
The anti-inflammatory diet proposed here for celiacs should be uniformly healthy, since it provides optimal vitamins (D, C, B12, etc.), low starch/sugar/carbs, an optimal omega-3 to -6 fatty acid ratio, increased meat and saturated fats, and avoids HFCS and trans fats. The only major adjustment for celiacs would be avoidance of individual food allergens, more attention to vitamin supplements to compensate for poor absorption and replacement of wheat by rice, potatoes, etc. The low carbohydrate nature of the diet makes it more approachable, since typical carbs, such as bread and cereal are avoided and replaced with meat and vegetables.

Tips for Staying happyfit all Summer Long

Now that summer is here (kids out of school…yay?), many of us have upcoming travels and a shift from consistent schedules to those that interrupt our health and exercise routines. Here are a few tips to help keep you #happyfit during the crazy days of summer.

1. Make time for yourself
Whether we’re on vacation or at home, it is so important for our well being to take a few moments out of the day just for ourselves. Whether this means waking up 10 minutes early or taking a quick bath at night, try to carve a few self-moments out of every day. Putting the kids in front of a 30-minute TV show and locking myself in my room for a power nap or meditation is my personal quickie. Your body will thank you for it, and I am sure those around you will too.

2. Even a little exercise is better than none
When we are off our normal routine or out of our regular environment, it is easy to think “I don’t have an hour to work out.” But even 10-20 minutes of exercise is better than none. This was my primary motivator in designing the Dailey Now DVD, which has shorter class options that you can combine or do alone.
My go-to if I’m in a pinch and just need to do SOMETHING is:
Forearm plank - as long as I can hold
20 push-ups
3 minutes of high c-curve
2 minutes of thigh work (WTO is a good one without a barre but I prefer thigh dancing!)
1 minute of back dancing
Savasana
This is less than 10 minutes, always makes me feel better and gives me more energy.

3. Go with the flow
Set expectations to have no expectations. When we travel or shift into a new routine, it is easy to set expectations, but more often than not, we become disappointed or frustrated when things do not work out as expected. So, instead of defining how you want something to be, try just to let it be. This is easier said than done for some of us but if we don’t have a rigid expectation of how something ‘shouldbe, then we are bound to handle the chaos (and there will be chaos) with a bit more grace and ease.

4. Moderation is key
Temptations are endless, especially when we are away from home. Life is not meant to be perfect, it is meant to be lived; so allow yourself indulgences, but do so with thoughtful moderation. Have a healthy breakfast if you know you’re going to have chips, guacamole and margaritas later in the day. Wake-up to a green juice after a night of ‘one too many’. And try to drink lots of water, which will keep you healthfully hydrated and feeling full. Balance is key to staying both happy and fit.

5.  Simplify
Sometimes the thought of packing for 4 or 5 is so overwhelming for me that I almost want to forego the trip. I consistently attempt to pack lighter, but it takes more thought and preparation - read some of the benefits of lightening your load here. But your job will be simpler by asking for help (this has not always been easy for me but it’s amazing how the more I do it the easier it is). I have a friend that has a packing list for each kid written out. If you take the time to do that, you can have your sitter pack the items or have your children pull out their own clothes so you just have to check against the list. If the planning of a party or another event is overwhelming, ask friends or family to pitch in with something they are good at - not only will it take something off your plate, but it makes us feel needed to help each other out which is incredibly gratifying for so many people… win-win for all!!

(Todays pick for A Month of Daily Phase One Recipes is these delicious Roasted Green Beans with Mushrooms, Balsamic, and Parmesan.  You might think of green beans as a summertime vegetable, but I first made these in January 2009, and since then this has become the most-pinned recipe from my blog on Pinterest.   Apparently a lot of people like green beans!  And these beans are so delicious, you won't even think about Phase One while you're eating them.)

Back in the days when most of my exposure to green beans meant the ones that came from a can, I wasn't too much of a green bean fan. Then Costco started carrying these lovely thin French beans, and I fell in love with green beans. They're expensive compared to most vegetables, so this is definitely something to make for a special dinner at my house, although the day I roasted the beans for this recipe I ate a big plate of green beans for lunch!

South Beach Diet Phase One Recipes Round Up for June 2013 Low Glycemic Recipes

It's July! This recipe for Kale and Basil Pesto with Lemon and Parmesan is a Public Service Announcement for all those lucky people who are growing kale in their gardens.  I actually made the pesto in these photos last September when my garden at the old house was bursting with kale.  Since I was giving kale away to anyone who stopped by, the abundance of kale led me to experiment with using it as an ingredient in pesto.  Kale is a strong flavor, so I froze my pesto in this mini-muffin tin, and each little ball of pesto was about three tablespoons, just the right amount to stir into a soup or toss with some pasta or rice.  If you have kale growing in your garden, or if your CSA or Farmer's Market gives you more kale than you know what to do with this summer, I highly recommend making this as soon as possible.

It's salad season, and my favorite Phase One Recipes for May 2013 were Leafy Green Salad with Roasted Chickpeas, Leftover Chicken Asian Chopped Salad, Barely Blanched Broccoli and Cauliflower Salad, and Pinto Bean Salad with Avocado, Tomatoes, Red Onion, and Cilantro.

It doesn't take more than a peek at the South Beach Diet Phase One Recipes Round-up for May to see that food bloggers have made the mental switch to summer eating.  There are lots and lots of salads, an abundance of foods cooked on the grill, plenty of fish, very few soups or stews, and recipe titles with summer ingredients like Tomatoes, Cucumbers, Basil, or Pesto.  Everyone loves summer don't they, (even people who haven't spent 30 years of their life teaching elementary school!)  I get so inspired by the fresh bright flavors that come with summer eating, and I think this recipes round-up has enough good ideas to keep you eating delicious food for weeks, whether or not you're doing Phase One.

(Updated with new photos and step-by-step instructions, August 2013.)  One interesting thing about blogging is how it becomes a record of what foods you're craving at different times of the year.  I've confessed how my mid-winter craving for tomatoes leads to recipes like  Pinto Bean Salad with Avocado, Tomatoes, Red Onion, and Cilantro.  It happened again in 2009, when I spotted the recipe for Greek Salad with Avocado, Shrimp, and Caper Vinaigrette from Nick's Fishmarket Maui in the R.S.V.P. column in Bon Appetit Magazine, and tomatoes jumped into my basket the next time I was at Costco. I did enjoy those mid-winter tomatoes, but if you're making this in the summer with fresh garden tomatoes it will be even better!  Another ingredient that really made this salad special was the caper vinaigrette.  I adapted the restaurant's recipe a bit, but I'd never leave out the capers, which were a brilliant addition here.

(For Friday Flashbacks I feature favorite recipes from the past that have been my personal favorites, and recipe for Sausage and Lentils with Fried Sage qualifies for Phase One Fridays as well.  My love for lentils is pretty obvious, and this is definitely something I'd enjoy eating any time of year.  And this year I have sage growing in my windowsill over the winter, score!)

This recipe for Sausage and Lentils with Fried Sage was inspired by one in The Silver Spoon, a classic Italian cookbook that I think every serious cook should own.  The addition of fried sage was my idea after seeing it on restaurant menus, and the fried sage was a wonderful addition to this dish, if I do say so myself.  Sage is something I have growing abundantly for most of the year, and when you fry it the sage flavor intensifies just a bit as the leaves are transformed into crispy morsels of sage-flavored goodness.  But if you like Italian Sausage and Lentils but don't have fresh sage, this dish would still be very good without the sage.
