Okay, raise your hand if youve had friends and family exclaim in disbelief, You eat RAW food? Well, I have just the dish to stick into their mouths the next time they start droning on about your food choices.
Im telling you, taste buds will dance with just one bite of this Zucchini Cannelloni, created by Julie Kalivretenos. Her beautiful Greek family is proof positive that just because you eat raw vegan cuisine doesnt necessarily mean you cruise around in a VW bus, munching on carrots and celery sticks all day.

Julienned Zucchini Vegan Mexican Bowl with Black Beans Avocado Tomato Poblano and Lime

In Utah it's expected to hit 104F this week, and it seems likely we're going to set a record this summer for the most days above 100F. I hear some people lose their appetite when the weather is extra hot, but that never happens to me; in fact when summer produce is abundant I'm always thinking up new ways to use it. My latest experiment was this Julienned Zucchini Vegan Mexican Bowl with Black Beans, Avocado, Tomato, Poblano, and Lime, and the fact that the only cooking involved was 2-3 minutes to quickly saute the julienned zucchini made this a great hot-weather dish. If you like zucchini and you're looking for a light summer meal where you don't need to heat up the kitchen, I bet you might enjoy this as much as I did.

This delicious Zucchini and Yellow Squash Soup with Rosemary and Parmesan is a recipe that has a lot of sentimental value for me. I first made it in 2008 when Lisa of Homesick Texan sent me the link to this recipe on Epicurious.com and told me how delicious it was. And I was making soup back then because I had just gotten braces on my teeth!
Now flash forward six years and I'm still enjoying this Zucchini Soup with my nice straight teeth. Things have changed in six years though, and now I'd pull out my beloved Cuisinart Electric Pressure Cooker to make the soup more quickly. Not to worry though, if you don't have a pressure cooker you can easily make this soup on the stove. It's still zucchini and summer squash season for a few more weeks, and I think using those summer veggies in a soup is a perfect way to transition into fall (which arrives tomorrow, sob!)
