Barely Blanched Broccoli and Cauliflower Salad with Red Bell Pepper, Radishes Red Onion, and Cashews would be a great meatless contribution for a summer pot-luck.

Memorial Day means the unofficial beginning of summer in the U.S., or as I like to think of it, the beginning of Salad Season!  I love those warm summer days when a big plate of salad seems like the perfect lunch, and I'm always looking for ideas for my next salad creation.  This Barely Blanched Broccoli and Cauliflower Salad with Red Bell Pepper, Radishes Red Onion, and Cashews was inspired by a salad I bookmarked years ago on a blog that's no longer posting.  I changed it quite a bit from the original salad and it took me a couple of tries to get it right, but I love all these ingredients and this final version of the salad is definitely a keeper.

(Updated with new photos and step-by-step instructions, August 2013.)  One interesting thing about blogging is how it becomes a record of what foods you're craving at different times of the year.  I've confessed how my mid-winter craving for tomatoes leads to recipes like  Pinto Bean Salad with Avocado, Tomatoes, Red Onion, and Cilantro.  It happened again in 2009, when I spotted the recipe for Greek Salad with Avocado, Shrimp, and Caper Vinaigrette from Nick's Fishmarket Maui in the R.S.V.P. column in Bon Appetit Magazine, and tomatoes jumped into my basket the next time I was at Costco. I did enjoy those mid-winter tomatoes, but if you're making this in the summer with fresh garden tomatoes it will be even better!  Another ingredient that really made this salad special was the caper vinaigrette.  I adapted the restaurant's recipe a bit, but I'd never leave out the capers, which were a brilliant addition here.

(For Phase One Fridays I highlight Phase One recipes from the past that have been my personal favorites, and this tasty salad with chicken, black beans, and red peppers with avocado dressing is something I love when the weather gets hot.  I normally post my Phase One Friday favorites on Friday morning, but I'm sharing this one early because tomorrow morning I'll be heading out bright and early to attend the BlogHer Food 2013 Conference.  This year the conference is in Austin, Texas, where it's definitely hot enough to make you crave this type of salad; enjoy!)

It's hot, hot, hot outside, and whether you're looking for a cold side dish to take to a party or just something that's an eat-it-cold meal idea, this Chicken, Black Bean, and Red Pepper Salad with Spicy Avocado Dressing is going to hit the spot, I promise.  If you really want to avoid cooking you can make this with leftover rotisserie chicken, but if you don't have that poaching two chicken breasts is still pretty quick and easy.  This salad stayed good in the fridge for several days, especially if you stir in a little more of the spicy avocado dressing to perk up the flavors.  Enjoy!

Re-discovering a recipe is always fun, and while I was unpacking from the move I found this old favorite rice salad recipe in a set of binders with recipes I clipped from cooking magazines back in the days before the internet.  The salad was called Roman Rice Salad, but unfortunately I didn't write down where I found it, and I couldn't find anything with that name online.  I made this salad many, many times through the years with white rice, dried basil, and chopped bell pepper, but I loved this updated version with brown rice, fresh chopped basil, and rings of pepper from sweet mini-peppers.

Everywhere you look on Pinterest and on the blogs there are Christmas cookies, and even though I do have a few ideas for low-sugar and sugar-free cookies, truthfully I'm tired of the sweets and ready for something green and crunchy!  This Easy Broccoli and Radish Salad with Gorgonzola is the kind of simple salad I'd make for myself for a quick lunch, but don't you think the bright red and green colors (and the use of creamy Gorgonzola cheese) make this something you can get away with for a Christmas salad?  Personally I would head right for this on the buffet table.

Before we get to the recipe, let's talk about healthier salad dressing.  Blue cheese dressing is definitely a limited food if you're following the South Beach Diet or trying to focus on healthy eating.  But I love blue cheese dressing, and for years I've been buying Lighthouse Chunky Blue Cheese and mixing it half-and-half with buttermilk for an easy and more diet-friendly blue cheese dressing that still tastes wonderful. That's the dressing I used for this easy salad, but if you have a favorite dressing recipe, I'm sure homemade dressing will be even better.  (And if you're making homemade blue cheese dressing eight days before Christmas, more power to you!)

The holidays are absolutely the hardest time of year to stick to a more carb-conscious eating plan, and when I go to a party I'm always grateful if the hosts offer a few healthy-eating options.  And when I'm taking a pot-luck dish, I always try to take a lower-carb favorite that's something I love so I won't feel deprived if there end up being lots of other things I don't want to eat.  I already have a favorite red-and-green chicken salad that's amazing if you're a green olive fan.  But this week I bought one of those packs of shredded rotisserie chicken meat from Costco (so handy!) and the idea for this Rotisserie Chicken Christmas Salad with Avocado, Red Pepper, and Lime popped into my mind.  And even though I am a very bad blogger for not sharing this with you sooner, this will still be delicious if you make it long after Christmas is over.

Cucumbers. Avocado.  Cilantro.  Lime.  Let me get those four ingredients out there just in case anyone turned up their nose at this idea because of the canned tuna, which admittedly is not everyone's cup of tea.  I wasn't much of a canned tuna lover myself until I discovered my favorite tuna packed in olive oil, and now I find myself reaching for it regularly, especially during the summer months.  This Cucumber Avocado Salad with Tuna, Cilantro, and Lime is something I came up with recently on one of those days when I was standing in front of the fridge wondering what to make for lunch.  My first time I just made one serving (and gobbled it up) and then the next day I worked on the actual recipe and took these photos.   And if this particular salad with tuna doesn't grab you, look after the recipe for some other ideas for tuna salads that are great for summer.

Celebrate Peach Season With Baby Arugula And Peach Salad Raw Vegan And Gluten Free!

Peaches are in Season
On Sunday you could find peaches at almost every stand at the local farmers market. In Sonoma county, everyone waits for Dry Creek peaches. Last year, while in Colorado, I was introduced to the wonderful Palisades peach. No matter what peach you have access to in your local area, they are a welcome sight when they finally arrive! And they pair beautifully with arugula in this quick and easy salad.


Arugula - A Nutritious Green!
Arugula, also known as rocket, has a peppery and slightly bitter flavor. Some people are put off by the bitterness of arugula while others are drawn to it for that very reason. If you havent acquired a taste for bitter greens quite yet, try mixing them in with spring greens. I must admit, I wasnt always an arugula fan but now I love the taste, especially of delicate baby arugula.


Arugula is packed with nutrients. Its a very good source of vitamin A, C, K, folate, calcium, iron and potassium. It even provides some omega-3 fatty acid!  A two ounce serving of arugula is only 14 calories yet it provides:


1328 IU vitamin A 
8.4 mg vitamin C
61 mcg vitamin K 
54 mcg folate 
90 mg calcium 
206 mg potassium 
.8 mg iron
95 mg omega-3 fatty acid


Arugula and Fresh Peaches
I got the idea of pairing arugula and peaches from a recent recipe in the Press Democrat. Sadly, like so much of the rich food in wine country, they felt compelled to mask the beautiful, natural flavor of these 2 ingredients with prosciutto and goat cheese. I know some of you are saying, "yummm, prosciutto and goat cheese". Well, if those are your favorite food groups - go for it. But heres a light and healthy version of this recipe that I think youll enjoy. 


Baby Arugula and Peach Salad
Raw Vegan, Gluten Free
[makes 4 servings]


2 small peaches, pitted, peeled and sliced
1 tablespoon freshly squeezed lemon juice
8 ounces baby arugula, cleaned
1 tablespoon plus 1 teaspoon cold pressed hemp oil or extra virgin olive oil
salt to taste
2 tablespoon slivered almonds (or raw pecans or walnuts)


Place peeled peaches in a small bowl and toss with lemon juice. Set aside.
Place arugula in a salad bowl and toss with oil and salt until nicely coated. Transfer to 4 plates.
Divide and mound peaches over arugula along with remaining juices. 
Top with nuts and serve.


Per serving (using hemp oil): 103 calories, 6.9 g fat, 0.6 g saturated fat, 863 mg omega-3 and 3368 mg omega-6 fatty acid, 0 mg cholesterol, 2.7 g protein, 23.5 g carbohydrates, 2.2 g fiber and 39 mg sodium (plus sodium from added salt). 


This recipe is appropriate for use during a raw food cleanse.

Garbanzo Beans as a Protein Source
I love garbanzos. Besides being a versatile bean that can be used in many different dishes, they contain an excellent source of complete protein which means they provide all the essential amino acids in the proper proportions. They are also an excellent source of dietary fiber, folate, and manganese.

Baked Falafel
I love a good falafel but most of them served in restaurants are fried. This recipe uses a small amount of oil and bakes them in the oven. Stuff a few of them in pita bread with chopped lettuce, cucumber, avocado and tomato. Top with some lemon-tahini sauce and you have a great lunch. Or for a lighter gluten-free meal, serve baked falafels on top of salad tossed with lemon-tahini sauce.

For a gluten-free meal, skip the pita and serve on top of salad.

Start with Dried Garbanzo Beans
Did you know that you can make falafels from dried garbanzo beans? Most cooked beans are packed in cans that are lined with BSP (bisphenol) so using dried beans, especially when they are organic, is a healthier way to go. And since you only have to soak and not cook the beans in this recipe, its not much of a bother.

Baked Falafels with Lemon Tahini Sauce
Vegan, Gluten Free
[makes 20 (2 inch x 1/2 inch) falafels and 1/2 cup tahini sauce, about 4 to 6 servings]
Requires a food processor, such as a Cusinart

Start soaking the beans the night before.

For the falafels
1 cup dried garbanzo beans
Water to soak beans
2 cloves garlic, peeled
1 teaspoon dried cumin
1/2 teaspoon dried coriander
1/4 teaspoon cayenne pepper
3/4 teaspoons salt
1/4 teaspoon black pepper
1/2 teaspoon baking powder
1 cup fresh parsley
1 cup chopped onion
1 to 2 tablespoons extra virgin olive oil

For the tahini sauce
1/4 cup tahini (I use raw tahini)
1 clove pressed garlic
3 tablespoons freshly squeezed lemon juice
1 to 2 tablespoons water
1/2 teaspoon salt

Pick through the garbanzo beans and discard any clumps of dirt or rocks. Rinse under cold water. Place in a 1 or 2 quart bowl and cover with several inches of water. Soak overnight.



With the food processor running (I really like the 11-cup Cuisinart), place the garlic through the shoot and process until all the garlic is chopped. 

Rinse the garbanzo beans and place in the food processor along with the cumin, coriander, cayenne, salt, black pepper, baking powder and parsley. Pulse until the garbanzos are coarsely chopped. Add the onions and pulse until everything is minced. Scrape down the sides when necessary. Do not over process. The resulting mixture should look like this:

Pulse until the mixture is minced, NOT pureed. 

Preheat the oven to 375 degrees F.

Lightly grease a cooking sheet or shallow baking pan. I like to use Silpat non-stick baking mats. These allow me to bake the falafels with the least amount of oil.

Form small balls of the mixture and pat them into 2 inch by 1/2 inch patties. Place on the prepared baking pan. Take a tablespoon of olive oil and using your finger or a brush, rub a little oil over each falafel. 



Bake until golden, about 15 minutes on each side. Remove from the oven.



Make the tahini sauce. Place the tahini in a small bowl with the pressed garlic and lemon juice. Stir until it is a smooth paste. Stir in the water until it reaches the desired consistency. Add the salt to taste and set aside.

Serve the falafels in pita bread with small diced cucumbers, avocado, lettuce, and tomatoes drizzled with the tahini sauce. 

Or place a few falafels over a salad that has been tossed in a thinner tahini sauce (add some more water) with a bit more tahini sauce drizzled over the falafels. 

Per falafel: 48 calories, 1 g total fat, 0 g saturated fat, 16 mg omega-3 and 335 mg omega-6 fatty acids, 0 mg cholesterol, 2 g protein, 7 g carbohydrate, 2 g dietary fiber, and 101 mg sodium.

Per serving of tahini sauce (about 1 1/3 teaspoons): 18 calories, 1 g total fat, 0 g saturated fat, 11 mg omega-3 and 620 mg omega-6 fatty acids, 0 mg cholesterol, 1 g protein, 1 g carbohydrate, 0 g dietary fiber, and 60 mg sodium.

Raw Vegan Spinach And Strawberry Salad With Almonds And Orange Vinaigrette




Spinach and Strawberry Salad with Orange Vinaigrette
[serves 4]
For the salad
6 cups raw baby spinach, cleaned
2 cups sliced fresh strawberries
1/4 cup raw sliced almonds
12 thin red onion slices
For the dressing
1/4 cup fresh orange juice
2 tablespoons extra virgin olive oil
2 tablespoons balsamic vinaigrette
2 teaspoons dijon mustard
1/2 teaspoons sea salt (more or less to taste)
1 teaspoon minced fresh garlic

Combine all salad ingredients in a large salad bowl except for the onion slices. Make the vinaigrette by mixing the dressing ingredients. Pour on salad, toss well and serve. Place 3 onion slices on each salad.

Per serving: 159.1 calories, 9.8 g fat, 1.2 g saturated fat, 0 g cholesterol, 3.4 g protein, 15.6 g carbohydrates and 3.7 g of fiber.

Green Bean Salad with Feta Cheese

Ingredients
  • 12 oz green beans
  • 1 red onion, chopped
  • 3-4 tbsp chopped fresh cilantro
  • 2 radishes, thinly sliced, 2 3/4oz reduced fat feta cheese, crumbled
  • 1tsp chopped fresh oregano
  • 2 tbsp red wine vinegar
  • 1/3 cup olive oil
  • 3 ripe tomatoes, cut into wedges
Preparation
1. Bring about 2 inches of water to a boil in the bottom of a steamer. Add
the green beans to the top part of the steamer, cover, and steam for 5
minutes, or until tender.
2. Place the beans in a large bowl and add the cilantro, radishes, and
feta cheese.
3. Sprinkle the oregano over the salad, then season with pepper. Mix the
vinegar and oil together in a small bowl and pour over the salad. Toss
gently to mix well.
4. Transfer to a serving platter, surround with the tomato wedges and
chill until ready to serve.
Makes 4 serving
